Buyer's Guide
How to Choose a Commercial Vegetable Cutting Machine
How to choose between cutting, slicing, chopping, grating and peeling machines by the cut you actually need and the KG-per-hour volume behind it, grounded in ATHAK's full vegetable processing range.

Start With the Cut, Not the Machine
“Vegetable cutting machine” covers several genuinely different jobs — cutting into shapes, slicing into uniform rounds, fine chopping, grating, and peeling are each done by a different machine in ATHAK’s vegetable processing range, at different KG-per-hour rates. Naming the cut you actually need narrows the field faster than browsing the whole category.
Multi-Shape Cutting: Square, Chips and Slices
ATHAK’s core vegetable cutting machines cut square, chips and slice shapes, and scale in three sizes:
| Model | Motor | Rated capacity |
|---|---|---|
| Regular | 1 HP | 150-200 KG/hour |
| Deluxe | 1 HP | 200-250 KG/hour |
| Jumbo | 2 HP | 500-600 KG/hour |
The Jumbo is a bowl-feed design that the catalogue describes specifically for institutional kitchens and caterers — a useful signal that it’s built for a different scale of operation than the Regular or Deluxe, not just a bigger motor on the same machine.
Slicing and Chopping Onion Are Different Jobs
Onion preparation splits across two distinct machines. The Onion Cutting (Chopping) Machine chops and cuts onion (and other vegetables) at 30-40 KG/hour on a 1 HP model or 70-80 KG/hour on a 2 HP model. The Onion Slicer Machine is built specifically for uniform slices, rated 125-200 KG/hour on a single 0.5 HP model — faster than either chopping model, because slicing is a simpler cut than chopping. If your prep is genuinely “sliced onion,” the dedicated slicer outperforms the chopper on both speed and lower motor size; if you need irregular or diced cuts, the chopper is the right tool.
Fine Chopping of Leafy and Firm Vegetables
The Vegetable Chopping Machine is built for fine chopping of leafy and firm vegetables, rated 100-125 KG/hour on a 1 HP motor at 1440 RPM, with a water-drain design for washing leafy greens before or during chopping. This is a different mechanism from the cutting machines above, aimed at fine, leafy-vegetable-friendly output rather than defined square or slice shapes.
Shredding Cabbage
The Cabbage Cutter Machine is a dedicated 1 HP model rated 150-200 KG/hour for fine, uniform cabbage shredding for salads and snacks. It sits in the same capacity band as the Regular cutting machine, but the mechanism is built specifically for a consistent shred rather than square or chip shapes.
Grating for Stuffing and Koftas
Two ATHAK machines grate rather than cut. The Vegetable Kadukas Machine grates vegetables for stuffing, koftas and snacks at 100 KG/hour on a 1 HP motor. The Kadukas Bhuka Machine cuts blade chips of carrot, lauki, beetroot and cabbage, and is listed both with a motor and stand (0.5 HP, 1440 RPM) and as the cutting head alone without motor or stand — useful if you already have a suitable motor and mount, or want the lighter standalone unit.
Peeling Is a Batch Job, Not a Continuous One
The Potato Peeler Machine works differently from the cutters above: it removes skin by abrasion in batches rather than continuous per-hour throughput. Six models are listed by batch size, from 5 KG to 50 KG, with HP ratings from 0.5 to 3 and average batch times from 2-3 minutes on the smallest model to 7-8 minutes on the largest. Size this one by batches per hour your kitchen realistically needs, the same way you’d size a dough kneader — not by treating the KG figure as a per-hour rate.
Garlic peeling is a genuine two-stage process in ATHAK’s range. The Garlic Bulb Breaker Machine separates bulbs into cloves first, rated 80-100 KG/hour on a 1 HP motor. The Garlic Peeler Machine then dry-peels those cloves, rated only 10-12 KG/hour on a 0.25 HP motor — a real step-down in throughput between the two stages. One bulb breaker can feed several peelers before the peeling stage becomes the bottleneck; check this ratio against your actual garlic volume rather than assuming the two machines run at matched speed.
Coconut and Small-Batch Hand Tools
The Coconut Scraper Machine is a 0.25 HP model for fresh coconut paste and chutney preparation, with no per-hour capacity printed for it. For genuinely low-volume or garnish-level work, ATHAK also lists hand-operated tools with no motor at all — a hand chilly cutter, hand salad cutter, hand potato slice machine and a bhaji cutter for leafy greens. These suit occasional prep or backup capacity during peak service, not a kitchen’s primary cutting volume.
Motorised vs Hand-Operated: The Real Trade-off
The gap between a hand tool and a motorised machine in this range is large — a 1 HP onion slicer rated 125-200 KG/hour moves far more volume than any hand cutter can, at the cost of a power connection, a larger footprint, and a motor to maintain. For a kitchen with genuinely low daily prep volume, a hand tool avoids that cost entirely. For anything approaching continuous daily prep at commercial volume, the throughput gap makes the motorised option the more practical choice.
Matching Capacity to Your Prep Volume
Add up your daily KG requirement per vegetable and cut type, then check it against the per-hour figures above for your actual prep window — not your full day, the same logic covered in how much roti production capacity does a commercial kitchen need? for the roti side of the kitchen. Where a machine works in batches, like the potato peeler, convert its batch time into batches per hour instead of comparing the KG figure directly against the continuous-throughput machines.
Share your vegetable types, cuts and daily volume when you request a quote, and ATHAK will confirm which combination of machines actually covers your prep line.
