Vegetable Preparation, Stage by Stage

Vegetable preparation is rarely one task — bulk cutting and slicing, bulb breaking and peeling, and grating or specialty cuts each use a differently shaped blade or drum. ATHAK's Vegetable Processing Machinery family covers all three, alongside hand-operated tools for smaller batches.

At a Glance

The Vegetable Preparation workflow uses ATHAK machines across 4 production stages, covering 16 machines in total.

The Production Workflow

The 4 Stages, With Real Machines

  1. 2

    Bulb Breaking & Peeling

Garlic preparation runs in two steps: the Garlic Bulb Breaker Machine separates bulbs into cloves at 80-100 KG per hour, then the Garlic Peeler Machine dry-peels cloves at 10-12 KG per hour.

  2. 3

    Grating & Specialty Cuts

Grating for stuffing, koftas and snacks, and blade-chip cuts for carrot, lauki, beetroot and cabbage. The Vegetable Kadukas Machine is rated 100 KG per hour; the Kadukas Bhuka Machine is offered with or without its own motor and stand; the Vegetable Chopping Machine fine-chops leafy and firm vegetables at 100-125 KG per hour; and the Coconut Scraper Machine handles fresh coconut for paste and chutney work.

Choosing Between Models

Choosing a Vegetable Cutting Machine Size

The Vegetable Cutting Machine's three sizes exist specifically so a kitchen does not have to buy more capacity than it needs: Regular is rated 150-200 KG per hour, Deluxe 200-250 KG per hour, and Jumbo — a 2HP bowl-feed model — 500-600 KG per hour. Sizing up from Regular to Jumbo is roughly a fourfold jump in throughput, not a marginal upgrade.

Onion preparation has its own size ladder: the Onion Cutting Machine's 1HP model is rated 30-40 KG per hour and its 2HP model 70-80 KG per hour, while the dedicated Onion Slicer Machine (for uniform slices specifically, rather than chopping) is rated higher still at 125-200 KG per hour.

FAQ

Vegetable Preparation Questions

What is the difference between the Regular, Deluxe and Jumbo vegetable cutting machines?

Rated capacity: the Regular model is 150-200 KG per hour, the Deluxe 200-250 KG per hour, and the Jumbo (a 2HP bowl-feed model) 500-600 KG per hour. All three cut square, chip and slice shapes.

Do I need both a garlic bulb breaker and a garlic peeler?

For a full dry-peeling process, yes — they are two separate stages in ATHAK's catalogue. The Garlic Bulb Breaker Machine separates bulbs into cloves first, at 80-100 KG per hour; the Garlic Peeler Machine then peels those cloves, at 10-12 KG per hour.

What machine handles high-volume onion preparation?

The Onion Slicer Machine is rated 125-200 KG per hour for uniform slices, and the Onion Cutting (Chopping) Machine is rated 30-40 KG per hour on its 1HP model or 70-80 KG per hour on its 2HP model.

Are hand-operated vegetable cutters still useful alongside motorised machines?

Yes, for smaller batches or garnish-level quantities where a motorised machine's throughput is not needed — ATHAK lists the Hand Salad Cutter, Hand Chilly Cutter, Hand Potato Slice Machine and Bhaji Cutter for this purpose.
