Namkeen and Farsan Production, Stage by Stage

Namkeen and farsan production covers many distinct shapes — sev, gathiya, fafda, samosas — each shaped or cut by its own machine, followed by frying, de-oiling and, often, a masala coating pass. ATHAK's Namkeen, Snacks & Fast Food Machinery family covers each of these stages.

At a Glance

The Namkeen Production workflow uses ATHAK machines across 5 production stages, covering 11 machines in total.

The Production Workflow

The 5 Stages, With Real Machines

  1. 1

Shaping — Sev, Gathiya & Fafda

Dough is pressed or sheeted into the namkeen item's final shape. The Nylon Sev Machine (1.5HP, 40-50 KG capacity) and Hand Operated Sev Machine (1.25 KG bowl, for smaller batches) press sev; the Farsan (Namkeen) Machine covers sev, gathiya, papdi, fulwadi and bundi across three models rated 60-70, 100-150 and 250-300 KG per hour; the Fafda Machine sheets fafda dough in Small (30-40 KG) and Jumbo (55-70 KG) formats.

  2. 2

    Samosa Forming

The Samosa Dough Sheet Machine rolls a continuous samosa sheet (patti) at 2500-3000 per hour; the Automatic Samosa Making Machine then forms and fills samosas, in SMALL and BIG models, both rated at 2500 per hour.

  3. 3

    Frying

Shaped namkeen and snacks are fried in the Deep (French) Fryer Machine, listed in seven sizes from 2 to 14 litres in electric and electric-plus-gas versions, or in an Electric Kadai for higher-volume kadai frying.

  4. 4

    De-Oiling & Drying

Fried namkeen carries excess surface oil that a spin dryer removes before packing or coating. The Dryer Machine is offered in a Regular version (10-15 KG) and a Tilting version for faster batch unloading (10-15 KG or 25-30 KG depending on model).

  5. 5

    Coating, Flavouring & Masala Mixing

A final pass adds seasoning and coating. The Coating Pan / Flavouring Pan Machine (running and tilting types, 10-40 KG across four models) coats and flavours namkeen, snacks and dry fruit; the Namkeen Masala Mixer (Ribbon Blender) blends spices, powders and namkeen masala across four models from 5-10 KG to 80-100 KG.

Choosing Between Models

Matching Batch Size Across the Line

A namkeen line is only as fast as its slowest stage. The Namkeen Masala Mixer (Ribbon Blender) is available in four sizes — 5-10 KG, 15-20 KG, 40-50 KG and 80-100 KG — and the Coating Pan / Flavouring Pan Machine in four sizes from 10-15 KG to 30-40 KG, so the post-frying stages can be sized to match whatever the shaping and frying stages actually produce per batch, rather than becoming the bottleneck.

The Farsan (Namkeen) Machine's three models (60-70, 100-150 and 250-300 KG per hour) give a similar size ladder on the shaping side, for kitchens producing sev, gathiya, papdi, fulwadi or bundi at different volumes.

FAQ

Namkeen Production Questions

What machine shapes sev and gathiya?

The Nylon Sev Machine (1.5HP, 40-50 KG capacity) and the Hand Operated Sev Machine (1.25 KG bowl) both press sev; the Farsan (Namkeen) Machine also covers gathiya, papdi, fulwadi and bundi, across three models from 60-70 KG to 250-300 KG per hour.

Why is a dryer machine needed after frying?

ATHAK's Dryer Machine is listed for de-oiling fried namkeen and removing water from potato slices — a spin-drying step that reduces surface oil and moisture before packing or coating.

Can ATHAK's samosa machine both form and fill samosas?

Yes. The Automatic Samosa Making Machine's listed applications are automatic samosa forming and automatic samosa filling, in SMALL and BIG models both rated 2500 per hour.

What size ribbon blender do I need for masala mixing?

The Namkeen Masala Mixer (Ribbon Blender) is listed in four sizes: 5-10 KG, 15-20 KG, 40-50 KG and 80-100 KG capacity. Match the size to your typical batch rather than your largest possible one, since a ribbon blender is most effective closer to its rated load.
